5 c Blueberries, fresh; washed 1/4 c Water
-and well drained, divided 1/4 c Sugar
3/4 c Sugar 3 tb Cornstarch
3/4 c Water Pie shell, 9″; baked
1 ts Lemon rind; grated
In saucepan, combine 1 cup blueberries, 3/4 cup sugar, 3/4 cup water,
and 1 teaspoon lemon rind. Bring mixture to a boil. Mix 1/4 cup
water, 1/4 cup sugar, and cornstarch and add to hot mixture. Cook
until clear and thick. Cool. Pour thickened mixture over 4 cups
blueberries in baked pie shell. Chill until ready to serve.
