Ava J. Cox’s Hot Water Cornbread

Ingrients & Directions


4 c Water 3 tb Bacon Grease, Shortening
1 1/2 c Cornmeal, Yellow Or White Or Vegetable Oil, melted
1/2 ts (To 1) Salt

* Preheat oven to 400 F.

1. Bring the water to a rolling boil. Sift in the cornmeal and salt,
stirring constantly. Remove from heat. If any lumps form, beat them
well with a wooden spoon or whisk to get rid of them.

2. Spread an 8-inch-square baking pan with 1 Tbs of fat, coating the
sides, also. Spread the batter in the dish, smoothing it out. Cover
it with the remaining fat.

3. Bake cornbread for 1 hour, or until brown and crisp around edges.
Cut into serving pieces.
