Sourdough Apple-carrot Bread

Ingrients & Directions


1 c Sourdough starter 1/2 c Shredded carrot
2/3 c Sugar 1 ts Cinnamon
1/4 c Melted butter 1 ts Baking powder
2 Eggs, slightly beaten 1/2 ts Salt
1 ts Vanilla 1 3/4 c All-purpose flour
1 c Shredded green apple, 1/2 c Chopped nuts
-unpeeled 1/2 c Coconut

Measure out sourdough starter in a large mixing bowl. Mix together
sugar, butter, eggs, vanilla, apple and carrot and add to sourdough.
Mix together dry ingredients and add to sourdough mixture. Blend
well. Fold in nuts and coconut. Pour into greased loaf pan. Bake at
350 for 50 to 60 minutes or until done. Cool 5 to 10 minutes.
Remove from pan. Cool and serve. Refrigerate any leftovers. Makes 1
loaf.
