Mattie Ball’s Rhubarb Custard Pie

Ingrients & Directions


2 c Rhubarb — diced 1 tb Flour
1 9 Inch Pie Shell — unbaked 1 ts Lemon Rind — grated
2 Eggs pn Salt
2 tb Water 2 tb Unsalted Butter
3/4 c Sugar

Place the rhubarb in the pie shell. Combine the eggs, water, sugar,
flour, lemon rind, and salt. Pour over the rhubarb and dot with
butter. Bake in a 350 F oven for 35-45 mins.
