2 c All-purpose flour
1 tb Baking powder
1 ts Salt
1/4 c Vegetable shortening
1 c Grated cheddar or other
-sharp cheese
1/2 c Chopped fresh chives
1 c 2% milk
3 tb Butter – (1/4 stick); melted
Preheat oven to 450 degrees. In a large bowl, mix the flour, baking
powder, and salt with a fork. With a pastry cutter, cut in the
shortening until the mixture resembles coarse crumbs. Stir in the
grated cheese and chives. Add the milk and stir just until the
mixture forms a soft dough that pulls away from the side of the bowl.
Turn the dough out onto a lightly floured surface; knead quickly to
mix the dough thoroughly. Roll dough into cylinder. Cut into 1-inch
slices and place on cookie sheet. Brush with the melted butter. Bake
until golden brown, about 12 to 15 minutes. Makes 1 1/2 dozen
biscuits.
Comments: Drop-style biscuits are a little heavier. When baking, be
sure to use precise measurements for all ingredients.
