Irish White Soda Bread

Ingrients & Directions


1 lb Plain white flour
1 ts (level) bread soda
1 ts Salt
1/2 pt Plus of sour milk

Sieve the cream flour, bread soda and salt into a large mixing bowl. Add
the wholemeal flour. Mix, make well in the centre and add sufficient milk
to make a soft dough,mixing with a wooden spoon. Turn out onto lightly
floured surface and knead lightly until there are no cracks. Make circular
shape with dough, place on a floured tin and cut a cross in the top. Bake
preheated 400F/200C/Gas 6 for 40-45 mins. When baked bread should sound
hoolow when tapped on base.

Recipes don’t call for baking powder, but I cheat and give it a helping
hand to rise! Various brown bread recipes have different quantities of
white flour in them, all a matter of preference. You don’t even need white
flour. The type of wholemeal flour affects the taxture of the bread. The
quantities I use can be put in to two 1lb tins and baked. If the bread ends
up not really being properly cooked then you can toast it and my kids love
toasted brown bread. I’d say that every time I post this, I’m looking at a
different recipe – so then I try to make sure I put in all of what I do.

Brown bread great with lotsa butter and soup! – or smoked salmon and brown
bread. White soda bread gorgeous with just butter and Jam.
