Chocolate Buttermilk Walnut Pie

1 2/3 c Sugar 3 Eggs
1 c Buttermilk 2 ts Vanilla extract
1/2 c Buttermilk baking mix 1 c Walnuts; chopped
1/2 c Unsweetened cocoa powder Vanilla or coffee
4 tb Butter or margarine Ice cream
— melted

Preparation Time: 1:00

1. Preheat oven to 350F. In a food processor, combine sugar,
buttermilk, baking mix, cocoa, melted butter, eggs and vanilla/
Process until smooth and well blended, scraping down sides of bowl
once or twice, 1 to 2 mins.

2. Pour filling into a well-greased 9-inch pie pan. Sprinkle walnuts
on top. Bake 40 to 45 mins, or until set. Serve pie warm or cold,
topped with scoops of ice cream.
