1 c White cornmeal
1/3 c Sifted flour
1 ts Salt
1 ts Baking powder
1/2 ts Soda
1 sm Onion diced
3/4 c Buttermilk; (about)
1. Mix cornmeal, flour, salt, baking powder and soda in a bowl.
2. Stir in onion and buttermilk. Blend thoroughly. If needed, add more
buttermilk for good consistency.
3. Drop batter by heaping teaspoonfuls into hot fat at least 1- in. deep.
4. Fry until golden, turn and brown other side.
5. Drain on absorbent paper and serve hot.
