Aunt Rose’s Zucchini Bread

Ingrients & Directions


3 c Flour 3 c Shredded, unpeeled zucchini
1 1/2 c Sugar 1 c Raisins
1 ts Cinnamon 1 c Nuts
1 Pinch salt 3 Eggs
1 ts Baking powder 2 ts Vanilla
1 ts Baking soda 1 c Oil

In a large bowl, mix together the flour, sugar, cinnamon, salt, baking
powder, baking soda, zucchini, raisins, and nuts. In another bowl,
beat together the eggs, vanilla, and oil. Pour over flour mixture and
stir until thoroughly mixed. Turn into 2 greased loaf pans. Bake at
350 for approximately 1 1/2 hours.

2 loaves
