Ingrients & Directions


1 Egg 2 ts Baking Powder
1 2/3 c Buttermilk 1 ts Salt
1/2 c Honey Or Molasses 1 ts Baking Soda
2 c Coarse Bran 1/2 c Seedless Raisins Or
2 c Unbleached White Or Chopped Dates — optional
Whole-Wheat Flour

Preheat oven to 350 F. In a large bowl beat egg until light. Add
buttermilk and honey or molasses. Mix dry ingredients and add to egg
mixture blending well. Add raisins or dates (if you want them) and
pour batter into a greased 9 1/2 X 5 1/2-inch loaf pan or 12 muffin
cups. Bake for 50 to 60 mins, or until the edges pull away from the
sides of the pan and the center feels firm to the touch.

Yield: 1 loaf or 12 large muffins.
