Orange Shortbread Madeleines

Ingrients & Directions


1 c Butter; softened 1 ts Orange extract
3/4 c Sifted powdered sugar 1 3/4 c All-purpose flour
1 ts Grated orange rind Vegetable cooking spray

Cream butter, gradually add sugar, beating at medium speed of an
electric mixer until light and fluffy. Add orange rind and extract.
Stir in flour. (Dough will be stiff).
Press about 1-1/2 tablespoons dough into madeleine molds lightly
sprayed with cooking spray. Bake at 325 degrees F for 20 minutes or
until done. Invert onto wire racks to cool. Yield: 2-1/2 dozen.
