Yellow Cornbread

Ingrients & Directions


1 c Flour 1/3 c Honey
1/4 c Yellow cornmeal 4 tb Butter or margarine; melted
1 ts Baking powder -=OR=-
1 ts Salt 1/4 c -Bacon Fat or
1 c Milk -Veg. Shortening, melted
2 Eggs

PREHEAT THE OVEN TO 425F. Grease an 8-inch pan with shortening.
Combine the flour, cornmeal, baking powder and salt. Stir and toss
them together well. Beat the milk, eggs, honey and melted fat in
another bowl until well mixed, then add them to the dry ingredients,
stirring until thoroughly blended. Pour the batter into the prepared
pan and bake for about 20 minutes. Serve piping hot with plenty of
butter and jam or honey. Makes one 8-inch square cake.
