1 1/2 ts Instant coffee powder 2 1-oz unsweetened chocolate
1 c Boiling water Squares; melted
1 c Sugar 2 c Flour
4 tb Butter or margarine 1 ts Baking soda
1 Egg 1/2 ts Salt
1 ts Vanilla extract 3/4 c Walnuts; chopped

1. Preheat oven to 350F. In a small bowl, dissolve coffee powder in
boiling water. Set aside to cool slightly.
2. In a medium bowl, beat together sugar, butter, egg, and vanilla
with an electric mixer on medium, until light and fluffy, 2 to 3
mins. Beat in chocolate.
3. Combine flour with baking soda and salt. Add dry ingredients to
chocolate mixture alternately with reserved coffee, beating well after
each addition. Stir in walnuts. Turn batter into greased 9 x 5 x
3-inch loaf pan.
4. Bake 55 to 60 mins, or until a cake tester inserted in center
comes out clean. Let loaf cool in pan 10 mins, then turn out onto
rack to let cool completely.
Serving Ideas : Spread with orange or strawberry whipped cream cheese.
