Broccoli Corn Bread

Ingrients & Directions


2 ea Eggs 1/2 c Butter or margarine,
1 c Cottage cheese -melted, divided
1 pk Frozen chopped broccoli, 2 pk Corn bread/muffin mix (8
-thawed (10 oz.) -1/2 oz. ea.)
3/4 c Chopped onion

In a mixing bowl. lightly beat eggs. Add cottage cheese, broccoli,
onion, 6 tablespoons butter and muffin mix; beat well. pour remaining
butter into a 10-inch ovenproof skillet; pour batter into skillet.
Bake at 350 degrees for 40-45 minutes or until golden. Cut into
wedges and serve warm. Serves 12-16. SOURCE:* Taste of Home Magazine,
