1 1/2 c Whole wheat pastry flour
1 c Oat bran
1 1/2 ts Baking powder
1/4 ts Baking soda
1/4 ts Salt
1 tb Sugar or other sweetener
2 tb Caraway seeds
1/4 c Raisins or currants
1 c Potato or soy milk
1 tb Lemon juice
Mix milk and lemon juice and set aside. Mix dry ingredients well, then
blend in caraway seeds and currants. Add milk stirring to make a stiff
dough. Turn into a lightly floured board and knead for 1 minute. Shape into
a round loaf and put into a greased 8″ round pan. With a floured knife, cut
a cross into the top. Bake at 350F for 40 minutes or until lightly browned.
