Sourdough Soda Bread

Ingrients & Directions


2 c Whole wheat flour 1 tb Honey
2 c All-purpose flour 1 tb Pure maple syrup
1 ts Baking powder 1 ts Dried basil
1 1/2 ts Baking soda 1/4 ts Dried thyme
1 tb Sugar 1 c Sourdough starter
1 pn Salt 1 c Buttermilk

Combine in a large bowl the whole wheat flour, the all-purpose flour,
the baking powder, the baking soda, salt, and sugar and stir well

Mix the sourdough starter and buttermilk together in a one quart cup
and blend in the honey, maple syrup, basil and thyme

Pour this liquid mixture into the large bowl containing flour; stir
and knead until a dough forms

Turn onto a floured surface and knead a few times

Form into a round loaf and slit the top several times

Place a pan of water on the lowest rung of the oven; preheat the oven
to 400 degrees

Place the dough on a non-stick baking pan sprinkled with corn meal and
place it in the oven directly above the pan of water; bake for 30
minutes at 400 degrees.
