2 tb Olive oil; up to 3
1 Onion; peeled and finely
; chopped
2 Garlic cloves; peeled and
-crushed
2 lb Ripe tomatoes; peeled,
-seeded and
; chopped
1 cn Tomatoes
1 Loaf of bread; roughly
-broken
1 bn Basil
Extra basil leaves to add
-just before

Heat the oil in a large pan and add the onions. Saut for 2-3 minutes
until soft but not brown. Add the fresh tomatoes and cook for 1
minute. Add the can of tomatoes, bread and basil and extra olive oil.
Simmer for 15 minutes. Just before serving fold in extra basil leaves.
