Brown Bread Ice Cream

Ingrients & Directions


175 g Fresh wholemeal breadcrumbs;
-(6oz)
2 170 g; (6oz) can of
; evaporated milk,
; chilled overnight
1 200 gram car virtually fat
-free fromage; (7oz)
; frais
A few drops of vanilla
-essence
3 tb Granulated artificial
-sweetener; or to taste
-(45ml)

Place the breadcrumbs on a baking sheet and brown under a moderate
grill for 5-10 minutes, stirring frequently, until the crumbs are
golden brown and very crisp. Allow to cool.

Meanwhile, whisk the evaporated milk until it doubles in volume and
stiff peaks form. Carefully fold in the fromage frais and vanilla
essence.

Mix the artificial sweetener and breadcrumbs together and fold into
the evaporated milk mixture. Turn into a rigid plastic container,
cover and freeze until firm.

Remove from the freezer 15 minutes before serving.
