Corn Bread Cake With Bacon

Ingrients & Directions


3 tb Bacon drippings,
1/4 c Yellow cornmeal,
1 ea Beaten egg,
9 oz Box yellow cake mix (a one-l
3/4 c Buttermilk or sour milk.

Melt drippings in a 9″ square pan in an oven which is being preheated
to 350 deg. In mixing bowl combine dry ingredients. In another bowl
combine the drippings, buttermilk and beaten egg and add that to the
dry ingredients. Use fork to blend well. Pour at once into the hot 9″
pan previously coated with drippings. Bake at 350 for 25 min. If you
don’t have bacon drippings, you can use shortening or cooking oil,
but the drippings add a lot of flavor.
