2 Eggs
1 c Sugar
1 c Dairy eggnog (not canned)
1/2 c Butter or margarine; melted
2 ts Rum extract
1 ts Vanilla
2 1/4 c Flour
2 ts Baking powder
1/2 ts Salt
1/4 ts Nutmeg
Heat oven to 350^ F. Grease bottom only of 9×5 inch loaf pan. Beat eggs
in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla;
blend well. Lightly spoon flour into measuring cup; level off. Add flour,
baking powder, salt and nutmeg; stirring just until dry ingredients are
moistened. Pour into greased pan. Bake for 45-50 minutes. Cool in pan
for 10 minutes then remove. Cool completely
