Peta Pumpkin Pie

Ingrients & Directions


1 1/4 lb Soft tofu
16 oz Pumpkin puree
3/4 c Maple syrup
3/4 c Sugar
1/3 c Flour
1 tb Cinnamon
1 ts Ginger
1 ts Nutmeg
9 Inch unbaked pie shell

Preheat oven 400.

Blend all the ingredients for the filling in blender or food processor
until smooth. Pour the mixture into unbaked pie shell. Bake 30
mins, then turn the oven to 350 degrees and bake for another 30-45
mins, or until filling is set.

Serve warm or cold.
