1 9 Inch Pie Shell — 1 c Dark Corn Syrup
-partially baked 1 1/4 c Pecans, Broken Or Slightly
1/3 c Butter Or Margarine — -Chopped
-melted 1 tb Rum
2/3 c Brown Sugar — packed 1/2 ts Salt
3 lg Eggs
1. Preheat oven to 450 F.
2. Bake the empty pie shell about 8 mins. Allow to cool while
preparing filling. Reduce oven temperature to 375 F.
3. In a mixing bowl, cream the butter and brown sugar. Beat in the
eggs, one at a time, until smooth. Stir in the corn syrup, pecans,
rum, and salt, blending thorouhgly.
4. Pour the mixture into the pie shell. Bake for 40 to 45 mins, or
until a knife inserted into the filling comes out clean. Serve warm
with vanilla ice cream. Also good served cold, though much chewier.
Makes 1 9-inch pie.
