1 c Yellow cornmeal 3/4 c Milk
1/4 c All-purpose flour 1 sm Chopped onion — finely
1 1/2 ts Baking powder Chopped
1/2 ts Salt Oil for deep-fat frying
1 ea Egg — beaten
In a medium bowl, combine cornmeal, flour, baking powder and salt; mix
well. Add the egg, milk and onion; stir just until mixed. In a
deep-fat fryer or electric skillet, heat oil to 365 deg. Drop batter
by teaspoonfuls onto oil. Fry 2 to 2 1/2 min. or until golden brown.
Drain on paper towelds. Serve warm. Yield: 4 to 6 servings.
