Apple Streusel Cake

Ingrients & Directions


1 1/3 c All purpose flour 1 ts Vanilla
1 c Whole wheat flour 2 Eggs
1 1/4 c Sugar 5 c Apples, coarsely diced
1 ts Baking soda 1/2 c Chopped nuts, optional
1 ts Baking powder THE STREUSEL:
1 ts Salt 2 tb Flour
1 ts Cinnamon 2 tb Butter, softened
1/2 c Oil 5 tb Sugar
1/4 c Honey 1 ts Cinnamon

Pre-heat the oven to 350?F. Grease and flour a 13×9-inch pan.

In a large bowl, combine all the ingredients except nuts,apples and
the streusel ingredients and mix, at low speed using an electric
mixer, until moistened; beat 2 minutes at medium speed.

Stir in the nuts and apples by hand. Spread the batter in the
prepared pan. In a small bowl mix the streusel ingredients to form a
crumb mixture and top the batter with it. Bake at 350 deg F for 40 to
50 min or until toothpick inserted in center comes out clean.

Serve warm or cool with whipped cream or ice cream.
