1/2 c Yellow cornmeal 1 c Corn
1 c Boiling water 2 Egg whites, beaten until
3 tb Apple juice concentrate Stiff
Combine cornmeal, water and apple juice concentrate, mixing well. Add
corn. Fold in egg whites. Spoon 1 tablespoon cakes onto a griddle
sprayed with pam. Cook on each side until golden brown.
