Smoky Corn Pancakes

Ingrients & Directions


1/2 c Boiling water
1/2 c Cornmeal
1/2 c Flour
1/3 c Sugar
2 ts Baking powder
1 1/2 ts Salt
2 tb Butter; melted
2 c Corn; cooked
2 Eggs
1/4 c Milk
1/4 c Salsa
1/4 ts Liquid smoke

In a large bowl, pour boiling water on the cornmeal and let stand for
10 minutes.

Add all the remaining ingredients and gently stir until well blended.
Make pancakes using 1/4 cup of batter for each. Can be fried in oil
or cooked in a nonstick pan.
