Mom’s Potato Pancake

Ingrients & Directions


4 c Potatoes — shredded 1 ts Salt
1 ea Egg — lightly beaten 1/4 ts Pepper
3 tb All-purpose flour Cooking oil
1 tb Grated onions

Rinse potatoes in cold water; drain well. Place in a large bowl. Add
egg, flour, onion, salt and pepper; mix well. In a skillet, heat 1/4
in of oil over med. heat. Drop batter by 1/3 cupfuls into hot oil,
Flatten to form a pancake. Fry until golden brown; turn and brown the
other side. Drain on paper towels. Serve immediately. Yield: 6
servings.
