6 oz Junior Mints 3 Eggs
24 oz Cream cheese 1 ts Vanilla extract
2/3 c Sugar
-CRUST:-
2 c Graham cracker crumbs 6 tb Butter or margarine —
1/4 c Sugar Melted
Combine crust ingredients and press into bottom and up sides of 9″
springform pan. Place Junior Mints in freezer. Preheat oven to 350.
With electric mixer or in food processor, combine cream cheese and
sugar until smooth. Add eggs, one at a time, beating well after each
addition. Stir in vanilla. Pour into crust. Chop cold minuts and
sprinkle onto cheesecake. Bake 40 to 45 minutes or until just set.
cool on wire rack, then chill several hours or overnight.
