8 oz Cream cheese 1/3 c Oil
1 Egg 1/2 ts Salt
1/2 c Sugar 1 c Water
1 ds Salt 1 ts Vanilla
1 1/2 c Flour 1 ts Soda
1 c Sugar Pecans
1/4 c Cocoa Chocolate chips
Combine, by hand, the first 4 ingredients in a small bowl. Do not
overmix. The cream cheese will be lumpy. Combine the next 8
ingredients in a larger bowl, stirring until smooth. Pour batter
into muffin tins about 1/2 full. Add 1 heaping teaspoon of cheese
mixture to center of each cupcake. Top with chocolate chips and
pecans. Bake for 20 minutes in 350 oven. Makes 18 regular or 30 mini
cupcakes.
