No-bake Chocolate Ricotta Pie

Ingrients & Directions


1 15-16 oz ricotta cheese, — melted
Low-fat 1/2 c Pistachio nuts; chopped
1/4 c Powdered sugar 1 Chocolate wafer crust
1 ts Vanilla extract (9-inch); baked
2 tb Heavy cream Whipped cream
6 oz Semisweet chocolate chips Shaved chocolate

1. In a medium bowl, beat together ricotta cheese, powdered sugar,
vanilla, and cream with an electric mixer on medium until light and
fluffy, 2 to 3 mins. Beat in melted chocolate until well blended.
Stir in pistachio nuts.

2. Turn into Chocolate Wafer Crust. Refrigerate until set, several
hours or overnight. Decorate with whipped cream and shaved chocolate.
