LEMON CAKE
4 oz Soft butter; (1/2 stick)
6 oz Caster sugar; (7/8 c
-superfine)
6 oz Self-rising flour; (1 3/8
-cup)
4 tb Milk
2 lg Eggs
1 Lemon; grated rind of
-LEMON SYRUP-
3 tb Icing sugar; rounded
-(powdered)
3 tb Fresh lemon juice
Grease and line a 2 pound loaf tim. Set oven to 350 degrees F or Mark 4.
Cream butter and sugar, add eggs, sifted flour, finely grated lemon rind
and milk. Mix well to a soft dropping consistency. Put in tin, smooth top
and bake for 40-50 minutes until firm. Mix sifted icing sugar and lemon
juice and pour over cake as soon as it comes out of the oven. Leave in tin
until completely cold.
