CAKE
1/2 c Butter or shortening 1/2 c Water
3 lg Eggs 2 1/2 c White flour
1/2 c Unsweetened frozen pineapple 1 t Baking soda
Juice concentrate, thawed 1 t Baking powder
In a large mixing bowl beat together butter (or shortening), eggs,
pineapple juice concentrate, and water until thoroughly blended. Add
flour, baking soda, and baking powder; beat just until blended.
Spoon mixture evening into a 9″ x 5″ oiled and floured loaf pan. Bake
in a preheated oven at 350 degrees for 45 minutes or until knife
inserted comes out clean. Cool on a wire rack.
