Idaho Potato Cake

Ingrients & Directions


1 c Butter or margarine, 2 c All-purpose flour
-softened 1/4 c Baking cocoa
2 c Sugar 1 ts Baking soda
2 Eggs 1 c Milk
1 c Cold mashed potatoes 1 c Chopped nuts
1 ts Vanilla extract

In a mixing bowl, cream butter and sugar until fluffy. Add eggs, one
at a time, beating well after each addition. Blend in potatoes and
vanilla. Combine flour, cocoa, and baking soda; add alternately with
milk, blending well after each addition. Stir in nuts. Pour into a
greased 1 3-in. x 9-in. x 2-in. baking pan. Bake at 350! for 40-45
minutes or until cake tests done. Cool on a wire rack.

Yield: 12-16 servings.
