Sour Cream Cake

Ingrients & Directions


5 tb Applesauce
2/3 c Sugar
1 ts Vanilla
1/4 ts Salt
1 c Sour cream
Egg sub for 1 egg; or 2 egg
-whites
3/4 ts Baking soda
3/4 ts Baking powder
1 1/2 c Flour
3/4 c Raisins or dried cranberries

Combine first 5 ingredients and stir until smooth. Break up lumps in baking
powder and soda, then whisk into mixture. Stir in flour and rasins until
just combined.

Pour into a prepared loaf pan, and bake at 350F for 40-45 minutes. Cool in
the pan 10 min. before removing.

Freezes well. Delicious!
