20 oz Crushed pineapple
— (unsweetened)
1 c Honey
2 ts Vanilla
3 c AM Whole Wheat Flour
4 ts Non-alum baking powder; OR..
2 ts -Baking soda
1 c Chopped nuts
Mix liquid ingredients. Mix dry ingredients separately. Combine
mixtures. Pour into an oiled 9″ x 13″ pan. Bake at 350 F. for 30-35
minutes.
GLAZE: In a small saucepan mix 1/2 cup frozen orange juice concentrate,
1/2 cup honey or rice syrup, 1 tablespoon oil and 2 tsp. arrowroot powder
dissolved in 1 tablespoon water. Simmer over medium heat until slightly
thickened. Poke holes in hot cake and pour glaze on top.
