2 c Rolled oats, regular 1/2 c Raisins
1 c Flour 2 Egg whites
1/2 ts Baking soda 1 c Crushed pineapple,
1/2 ts Baking powder Unsweetened, drained
1 ts Nutmeg or allspice 1 md Orange, juice and grated
1 1/2 ts Cinnamon Peel of
1 1/2 ts Vanilla 2 tb Canola oil
1 c Apple juice concentrate
Combine dry ingredients in one bowl and wet in another. Combine and
let stand to absorb, 2-3 minutes. Drop by teaspoons onto a spryed
cookie sheet. Bake 12-15 minutes at 350F. until browned.
Variation: Add carob chips for the kids.
