1 c Sifted all-purpose flour
1/2 ts Baking powder
1/2 ts Salt
1/2 ts Baking soda
1/2 c Butter
1/2 c Granulated sugar
1/2 c Brown sugar; packed firm
1 Egg
1 ts Vanilla
1/2 c Quick-cooking oatmeal
1 c Coconut
1 c Pecans; chopped
Sift flour with baking powder, soda & salt. Cream butter. Gradually add
sugars & cream until light & fluffy. Add egg & vanilla. Beat well. Add
flour mixture in 4 parts, beating just until smooth after each addition.
Mix in oatmeal, coconut & pecans. Drop by teaspoonful onto ungreased baking
sheet. Bake at 375 for 8-12 minutes or until golden brown. Makes 4 dozen.
