MRS. FIELDS’ COOKIE BOOK
TOPPING
3 tb Sugar
1 tb Ground cinnamon
COOKIES
2 1/2 c All purp flour
1/2 ts Baking soda
1/4 ts Salt
1 c Dark brown sugar
1/2 c White sugar
1 c Salted butter, softened
2 lg Eggs
2 ts Pure vanilla extract
Preheat oven to 300 F. In a sm bowl combine sugar and cinnamon for topping.
Set aside. In a med bowl combine flour, soda and salt. Mix well with a wire
whisk and set aside. In a lg bowl blend sugars with an electric mixer set
at med speed. Add butter and mix to form a grainy paste. Scrape sides of
bowl, then add eggs and vanilla. Mix at med speed until light annd fluffy.
Add flour mixture and blend at low speed just until combined. Do not
overmix. Shape dough into 1″ balls and roll each ball in cinnamon-sugar
topping. Place on ungreased cookie sheets, 2″ apart. Bake 18-20 minutes.
Immediately transfer cookies with a spatula to a cool, flat surface. S:
