8 c Brown sugar
3 c Butter
8 Eggs
2 ts Salt
4 ts Cinnamon
4 ts Baking powder
8 ts Soda, dissolved in:
3/4 c Boiling water
8 c Flour
8 c Oatmeal
FILLING
3 Egg whites
1 1/2 c Shortening
3 c Powdered sugar, or more
6 tb Milk
3 ts Vanilla

Another old, old recipe that is positively HUGE. You will probably want to
halve it and you’ll still have plenty of cookies. Remember, though, you
will be sandwiching two cookies together to make one cookie.
Mix together brown sugar and butter, then add eggs and mix well. Mix
together dry ingredients and add alternately with soda water. Drop by
teaspoon on cookie sheet. Bake at 375F for 10-12 minutes, or until done.
Filling: Beat egg whites until stiff, add vanilla, milk and sugar. Cream
shortening and add to mixture. Spread on cooled cookie, cover with second
cookie to make sandwich.
