Applesauce-raisin Cookies

Ingrients & Directions


1/4 c Vegetable oil 2 ts Baking powder
1/4 c Sugar 1/2 ts Baking soda
1 Egg 1 ts Ground cinnamon
1 ts Vanilla extract 1/8 ts Ground cloves
1/2 c Unsweetened Applesauce 1/2 c Rolled oats
1/2 c Whole Wheat Flour 1/2 c Raisins
1/2 c Unbleached White Flour

Cream the oil and sugar together. Add the egg and beat until light.
Blend in the vanilla and applesauce. Stir in the flours, baking
powder, baking soda, cinnamon, cloves, oats and raisins into the
creamed mixture. Blend well.

Drop by teaspoonfuls onto lightly-oiled baking sheets. Bake in a 375
F oven for 8-10 min or until lightly browned. Cool on a wire rack.

Makes 24 cookies, each 56 calories 10 carbohydrates, 1 protein, 2
fat, 47 sodium, 49 potassium, 11 cholesterol 1/2 fruit exchange, 1/2
fat exchange
