1/2 c Butter or margarine 1 ea Large egg
1/2 c Creamy or chunk-style peanut 3/4 ts Vanilla extract
Butter 1 1/4 c All-purpose flour
1/2 c Granulated sugar 3/4 ts Baking soda
1/2 c Light brown sugar, firmly 1/4 ts Baking soda
Packed 1/4 ts Salt
Heat oven to 375 F. In large bowl with electric mixer at medium
speed, beat butter, peanut butter, granulated sugar and 1/4 cup of
the brown sugar until light and fluffy. Beat in egg and vanilla until
thoroughly blended. In small bowl, combine flour, baking soda and
salt. With mixer at low speed, beat into butter mixture until
blended. Sprinkle remaining 1/4 cup brown sugar on top of dough.
Using rubber spatula, lightly fold in sugar. (Sugar granules will
still be visible.) Roll heaping teaspoonfuls of dough into balls;
place 2 inches apart on ungreased cookie sheets. Using bottom of
glass, press each ball into 1/4 inch-thick circle. Bake 5-8 munutes
until lightly browned. Remove cookies to wire rack to cool…
