1 c Pumpkin
1/2 c Sugar
1/2 ts Cinnamon
1/2 ts Ginger
1/4 ts Nutmeg
1/4 ts Salt
COOKIES
3 c Flour
1 ts Salt
1/2 ts Baking soda
1/2 c Brown sugar
3/4 c Shortening
1 Egg
1/4 c Molasses
1 c Rolled oats

Filling: Blend ingredients together and set aside.
Cookies: Mix and sift together flour, salt & baking soda. Combine sugar,
shortening, egg and molasses; mix well. Add dry ingredients to molasses
mixture. Add oats. Chill 30 minutes. Roll out 1/8 inch thick; place 1 tbs
filling on 1 cookie and cover with a second cookie. Press together and slit
top. Bake at 375 for 15 minutes.
