3 qt Fresh strawberry; divided 1 10″ deep dish pastry shell;
1 1/2 c Sugar; 1 c Alta Dena heavy cream;
6 tb Cornstarch; 1 1/2 c Instant vanilla pudding mix;
2/3 c Water;
In a large bowl, mash enough strawberries to equal 3 cups. In a
saucepan, combine sugar and cornstarch. Stir in the mashed
strawberries and water; mix well. Cook and stir for 2 minutes.
Remove from heat. Pour into a large bowl. Chill 2-3 hours. In a
small mixing bowl whip cream and until soft pecks form. Sprinkle
pudding over cream and whip until stiff. Pipe around edge of pie or
doing on individual. Serves 8 to 10.
