1 Refrigerated pie crust
1 ts Flour
3 tb Butter
1 md Onion; chopped
1 pk Spinach; (chopped, thawed,
; squeezed dry)
; (10oz)
1/2 ts Salt
1/2 ts Pepper
1/4 ts Nutmeg
1 Container ricotta cheese;
-(18 oz)
2 c Mozzarella cheese; grated
1 c Grated Parmesan cheese
3 Eggs; beaten to blend
Unfold pie crust and sprinkle one side with flour. Place pie crust in dish,
flour side down. In a heavy skillet, melt butter, add onion and saute until
tender. Mix in spinach, salt, pepper and nutmeg. Saute until liquid
evaporates, about 3 minutes. In a large bowl, combine ricotta, mozzarella
and Parmesan. Mix in eggs. Add spinach and blend well. Pour mixture into
crust. Bake at 350 degrees about 40 minutes. Let stand 10 minutes. Yield: 6
servings.
