FILLING
2 lg Sweet potatoes
Powdered egg sub.;
-equivalent to 3 eggs.
2/3 c Sugar
1/2 ts Salt
1 ts Ground cinnamon
1/4 ts Ground ginger
1/4 ts Grated nutmeg
1 c Skim milk
GRAPE NUTS PIE CRUST
1 1/2 c Grape nuts
1/8 c Maple syrup
A touch of water to make a
-bit more sticky
I modified a sweet potato pie recipe from the ‘cooking live’ program and
cooked it up last week. Here it is as I cooked it.
Filling: Nuke the potatoes, or bake at 350F for 1 hour. Cool, peel and
puree in a food processor. Add the remaining ingredients in order and blend
until smooth. Pour into your favourite ff pie crust and bake at 350F for 1
hour.
I used a grape nuts pie crust:
Press into a 9″ pie pan.
This pie also freezes very well…highly recommended!!
