1 cn (14 oz) pumpkin puree
2 Eggs
3/4 c Light cream
1/2 c Brown sugar
1/2 ts Cinnamon
1/2 ts Ground ginger
1/4 ts Each ground cloves and salt
1 c Mincemeat
1 9-inch unbaked pie shell
“The addition of a mincemeat layer gives a delicious, tangy flavor and
nutty texture.”
In bowl, whisk together the pumpkin puree, eggs, light cream, brown sugar,
cinnamon, ginger, cloves and salt. Spread mincemeat over bottom of pie
shell; top with the pumpkin mixture. Bake in preheated oven at 375 F. about
45 minutes, or until pumpkin is just set in center.
