Scintillating Lemon Pie

Ingrients & Directions


1 Pastry shell *
1 1/2 c Sugar
1/4 ts Salt
1/3 c Butter, softened
3 Eggs, well beaten
2 tb Lemon rind, fresh grated
3 Lemons, peeled, sliced thin
1/2 c Cold water

* Make triangular sections for top – dust with sugar and nutmeg. Bake

Mix all ingredients and pour into the unbaked pastry shell. Bake at
400 deg F for 25 min. Add the prebaked triangular sections and bake
another 10 min.
