Elanor’s Sweet Potato Pie

Ingrients & Directions


3 1/2 c Sweet potatoes, cook/mash 1/2 ts Nutmeg
1/2 c Butter, softened 13 oz Evaporated Milk
2 c Sugar 2 ts Lemon extract
4 ea Eggs 2 ea Deep dish unbaked pie shells
1/2 ts Salt

beating well. After each one, stir in salt, nutmeg, milk and extract.
Pour into 2 deep dish unbaked, pie shells. Bake at 425 for 20 minutes.
Then lower oven to 325 and bake for 30-40 minutes longer.
