Oatmeal Raisin Cookies

Ingrients & Directions


1/2 c Brown sugar; packed
1/4 c Sugar
1/3 c Prune paste
1 Egg
1 ts Vanilla extract
3/4 c Flour
1/2 ts Baking soda
1/2 ts Cinnamon
1/4 ts Baking powder
1/4 ts Salt
1 1/2 c Quick-cooking oats
3/4 c Raisins

*Original recipe calls for Sunsweet Lighter Bake (prune paste). Substitutes
could be WonderSlim, homemade prune paste, or applesauce.

In a large bowl, beat together sugars, Lighter Bake, egg and vanilla. In
another bowl, combine flour, baking soda, cinnamon, baking powder and salt;
stir into Lighter Bake mixture. Stir in oats and raisins. Drop by rounded
teaspoonfuls onto baking sheets coated with vegetable cooking spray. Bake 8
to 9 minutes at 375 F. Cool on racks.
