Sweet Potato Bread

Ingrients & Directions


1/3 c Butter Or Margarine 1 ts Baking Soda
3/4 c Sugar, (To 1 1/4 Cups) * 1/2 ts Salt
2 Eggs 1/2 ts Ground Cinnamon
1/2 c Molasses 1/2 ts Nutmeg — grated
1 c Sweet Potato — cook, peel, 1/2 ts Ground Allspice
& mashed 1/4 ts Ground Cloves
2 c All-Purpose Flour 1/4 c Seedless Raisins
1/4 ts Baking Powder 3/4 c Walnuts — chopped

* Amount of sugar used depends on the sweetness of the natural sweet
potatoes. Preheat oven to 350 F. Combine butter or margarine, sugar,
and eggs. Beat until light and fluffy. Stir in molasses and sweet
potatoes. Sift dry ingredients and spices. Add to sweet potato
mixture. Add raisins and chopped walnuts. Blend well. Turn into a
greased loaf pan (9 x 5 x 3 inches) and bake for 1 hour, or until the
edges have pulled away from the sides of the pan and the bread feels
firm to the touch in the center. Turn out of pan and cool completely
on a baking rack.
